100% Palomino. In a region devoted to tradition, there is no more traditional bodega than Sherry’s most historic house, Valdespino. Their bodega in Sanlucar makes Valdespino the envy of every other sherry producer, and it is the source of most of its best wines, including their Manzanilla Deliciosa. The wine’s intensity defies description. Valdespino’s Miraflores vineyard is the source for its prized Manzanilla Deliciosa and once harvested the grapes then come to their bodega in Sanlucar to age under flor yeast for five years. As you would expect from a classic Manzanilla, it is both lighter and more saline than a fino, but it also intense and powerful in the Valdespino style. Valdespino is often called the “the Romanee-Conti of Jerez” and we absolutely agree which is why we love having their wines in stock. We are huge fans of their sherries and we believe the sherry category, in general, should be more shown more love.
