100% Chardonnay. The Doyard family traces their winemaking roots in Champagne back to 1677 when a marriage license of Jean-Baptise Doyard showed “winegrower” as the occupation. Maurice Doyard was the first in the family to make wine in Vertus under the Doyard label in 1927, officially signifying the domaine’s foundation. In 1979, Yannick Doyard took over, turning it into a beacon for precise, vinous, mineral-etched Champagne in the Côtes des Blancs. Today, Yannick’s son Guillaume is at the helm. The domaine employs organic farming in the vines, with most of the vineyards worked by horse. Yields are kept very low, adding to the concentrated intensity that defines the estate’s style. The Doyard profile is so great that William Kelley of the Wine Advocate wrote, “the Doyard family’s vinous, incisive Champagnes deserve a place in any well-stocked cellar. Deep, concentrated, and characterful, everything that bears the Doyard label is well worth serious attention.” Their Revolution is primarily from Avize Grand Cru, along with small parcels in Le Mesnil Grand Cru, Cramant Grand Cru, and Oger Grand Cru. The vines are 40+ years old, fermented naturally, and only 20% go through malo while being in 50% Burgundy barrels and 50% steel. The wine is then aged on its lees for 78 months. All this leads up to flavors of lemon oil, white flowers, mandarin, golden orchard fruit, and buttered toast. Full-bodied, layered, and muscular, it’s tangy and incisive, with a satiny attack that segues into a generous core of fruit, concluding with a long, mouthwatering finish. Stunning champagne that should be talked about more.
